Lasagna Soup

  1. Remove the lid from the pot. Turn the dial to SEAR/SAUTÉ, set the temperature to HIGH, and press START/STOP to begin preheating. Allow the Ninja Foodi PossibleCooker to preheat for 5 minutes.

  2. When preheating is complete, add 15ml of oil, 1 onion (diced), and 1 large carrot (diced) to the pot. Cook uncovered for 5 minutes, stirring occasionally until tender.

  3. Add 1 teaspoon of Italian seasoning, 2 garlic cloves (minced), and 500g ground turkey to the pot. Break up the ground meat into small pieces and continue to cook until the meat is fully cooked, about 10 minutes.

  4. Once the meat is cooked, add 400g can of diced tomatoes and 500ml of broth to the pot. Stir to combine, then cover with the lid.

  5. Turn the dial to SLOW COOK, set the temperature to 200°C, set the time to 25 minutes, and press START/STOP to continue cooking.

  6. After 10 minutes, add 100g broken lasagna sheets and a handful of fresh basil leaves. Stir to combine, then cover with the lid.

  7. Cook for up to 15 minutes, or until the lasagna sheets are cooked. Season with salt and pepper to taste.

  8. While the soup cooks, in a small mixing bowl, mix together 250g ricotta cheese, 150g mozzarella cheese, and 50g Parmesan cheese. Set aside.

  9. When cooking is complete, serve the soup immediately with a dollop of the cheese mixture and fresh basil leaves.
