  • 1 onion, diced
  • 1 red capsicum (bell pepper), chopped
  • 2 zucchini’s, sliced
  • 1 large eggplant, cut into cubes
  • 250g (1/2 a box) raw pasta
  • 1 bottle tomato passata sauce
  • 4 cups/ 1 litre vegetable stoc
  • 1/2 cup canned coconut cream
  • 2 tsp dried mixed herbs
  • 1/2 tbsp minced garlic
  • 1/2 tsp salt

Methods

 

 

  1. In the Ninja® Foodi® SmartLid™ Multi Cooker, select the Sauté cooking mode and Sauté the onion in a little olive oil until soft.

  2. Add the vegetables and quickly stir.

  3. Add the remaining ingredients and stir. Then adjust the Ninja® Foodi® SmartLid™ Multi Cooker to Boil and Pressure mode. Bring ingredients to the boil then adjust the Ninja® Foodi® SmartLid™ Multi Cooker to Pressure Cook mode and cook for a further 6 minutes.

  4. Release the air then serve and enjoy!
